Laughing Cow Stuffed Mushrooms

Cook Time: About 15 minutes

Ingredients:
  • 24 whole mushrooms
  • 12 wedges Laughing Cow Cheese, Light
  • 1 clove minced garlic
  • 1/2 cup Italian Style breadcrumbs
  • 1/4 cup chopped scallions

Directions:
  • Melt cheese in microwave to soften.  Add garlic and heat another 20-30 seconds.  Stir.
  • Combine cheese, breadcrumbs, chopped stems, and scallions.
  • Spray cookie sheet with cooking spray.
  • Fill mushrooms with filling.
  • Cook at 400 degrees until lightly browned.

Bubble Up Pizza Casserole

Ingredients:
  • 1 lb ground beef
  • 2 tsp onion powder
  • 16 oz pasta sauce or tomato sauce
  • 1/2 tsp ground basil
  • 3 cloves minced garlic
  • 1 tsp Italian seasoning
  • 1 cup mushrooms, sliced (I used a lot more)
  • 1/2 cup green pepper, chopped
  • 1 serving (14 slices) Mama Mary's Gourmet Pepperoni
  • 15 oz Pillsbury Buttermilk Biscuits, quartered
  • 1 1/4 cup part skim mozzarella
Directions:
  • Preheat oven to 350 degrees
  • In skillet, brown meat over medium heat until browned.  Stir in onion powder, tomato sauce, basil, garlic, and Italian seasoning.
  • Add veggies and pepperoni.  Add quartered biscuits; stir gently until biscuits are covered with sauce.  Spoon mixture into a 9x13 inch baking dish coated with cooking spray.
  • Bake for 25 minutes.  Sprinkle with cheese, bake an additional 10 minutes or until biscuits are done.
  • Let stand 5 minutes before serving.
Tips:
  • In trying to make these even a bit more healthy, I'll be keeping an eye out for reduced fat biscuits.
  • Next time I will probably add more veggies such as onions and green pepper.

Deviled Eggs

Ingredients:
  • 4 large hard boiled eggs, cooled and peeled
  • 2 Tbsp low fat mayonnaise
  • 1 tsp dijon mustard
  • paprika
  • salt and pepper to taste
  • 2 Tbsp chopped chives

Directions:
  • Cut eggs in half longways.  Remove yolks and put them in a bowl.
  • Add mayo, mustard, salt, and pepper.  Stir well.
  • Pipe yolk mixture back into egg whites.
  • Top with chives and paprika (picture shown without chives).

Nutella Thumbprint Cookies

Ingredients:
  • 1 cup all purpose flour
  • 1 cup powdered sugar
  • 1/3 cup unsweetened cocoa
  • 1/4 tsp salt
  • 1/2 cup butter (1 stick)
  • 2 large egg yolks
  • 1/2 tsp vanilla extract
  • 1/3 cup Nutella Hazelnut Spread

Directions:
  • Preheat oven to 350
  • Spoon flour into a measuring cup and level the top with a knife to create exactly one cup of unpacked flour.
  • In a large bowl, combine flour with powdered sugar, salt and cocoa, stirring until mixed.  
  • In a separate large bowl, place the stick of butter and beat it with a hand mixer at a medium speed until fluffy (about 1-2 min).  
  • Stir the egg yolks together in a small cup with a whisk and when combined, add them along with the vanilla to the butter and beat with mixer until combines.  Add flour mixture to bowl and beat together on a low speed for several minutes until dough combines and thickens.
  • Place the dough onto a sheet of wax paper and knead it several times until smooth.  Breaking pieces off the dough, form 28 balls (about 1" each).  Line a large baking sheet with parchment paper and place the balls in rows one inch apart on the paper.
  • Press thumb in each cookie to leave an indention.  Bake for 10 minutes.  Cool on wire rack.
  • Spread 1/2 tsp Nutella into each thumbprint.

Junior Mint Brownies

Ingredients:
  • cooking spray
  • 1/4 cup butter
  • 3 oz Junior Mints
  • 1 cup all-purpose flour
  • 1/4 tsp baking soda
  • 1/8 tsp salt
  • 2/3 cup sugar
  • 1/3 cup unsweetened cocoa
  • 1 large egg white
  • 1 large egg

Directions:
  • Preheat oven to 350.
  • Coat bottom of an 8 inch square pan with cooking spray.
  • Combine butter and mints in a 2 cup glass measure; microwave on high 30 seconds or until soft.  Stir until smooth, set aside.
  • Lightly spoon flour into a dry measuring cup and level with a knife.  Combine flour, soda, and salt in a bowl.  
  • Combine sugar, cocoa, egg, and egg white in a large bowl; beat at medium speed of a mixer until well-blended.  Add mint mixture; beat well.  Add flour mixture; beat at low speed until just blended.
  • Pour batter into prepared pan.  Bake at 350 for 20  minutes or until a wooden toothpick comes out clean; cool completely on a wire rack.
Tips:
  • Note:  Two 1.5 oz patties may be substituted for Junior Mints

Toffee Blonde Brownies

Ingredients:
  • 1 cup packed brown sugar
  • 1/4 cup butter, melted
  • 1/4 cup egg substitute
  • 2 tsp vanilla extract
  • 1 cup all-purpose flour
  • 1/2 tsp baking powder
  • 1/8 tsp salt
  • cooking spray
  • 1/4 cup toffee baking bits (such as Heath)

Directions:
  • Preheat oven to 350
  • Combine first 4 ingredients in a large bowl; stir with a whisk.  Lightly spoon flour into a dry measuring cup; level with a knife.
  • Combine flour, baking powder, and salt.  Add flour mixture to sugar mixture; stir just until moist.
  • Spread batter in an 8 inch square baking pan coated with cooking spray.  Sprinkle with toffee bits.
  • Bake at 350 for 22 minutes or until a wooden toothpick inserted in center comes out almost clean. Cool in pan on a wire rack.
Tips:
  • Store covered up to 3 days.

Quesadilla Casserole

Ingredients:
  • 1 lb Ground Beef
  • 1/2 med onion, chopped
  • 15 oz tomato sauce
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 can whole kernel corn, undrained (I used shoepeg)
  • 1 can (4.5 oz) chopped green chiles, undrained
  • 6 flour tortillas (8 in)
  • 1 cup shredded cheddar (reduced fat)
  • 2 tsp chili powder
  • 1 tsp cumin
  • 1 tsp minced garlic
  • 1/2 tsp oregano
  • 1/2 tsp crushed red pepper (optional)

Directions:
  • Brown beef and onion in large skillet, drain.  Add tomato sauce, beans, corn and green chiles, mix well.  Stir in all of the spices except red pepper.  Bring to boil.  Reduce heat to low; simmer for 5 min.  Add red pepper to taste if desired (I skipped it).
  • Spread 1/2 cup of the beef mixture on bottom of 13x9 baking dish sprayed with non stick spray.  Top with 3 of the tortillas, overlapping as needed.  Layer with 1/2 of the remaining beef mixture and 1/2 of the cheese.  Repeat with remaining tortillas, beef, mixture, and cheese.
  • Bake at 350 for 15 min. or until heated through.
Tips:
  • I made this Sunday, covered it with foil, then put it in the freezer.  Tonight we put it in the oven with the foil still on for 40 minutes then took the foil off and cooked for another 10 minutes.
  • I topped mine with a little fat free sour cream.  YUM!
  • Next time I'll also top with shredded lettuce and some salsa to make it even better!

Gina's Baked Chicken Parmesan

Ingredients:
  • 4 (8 oz) chicken breast halves, sliced in half
  • 3/4 cup seasoned breadcrumbs (I didn't have any so added my own seasonings to plain breadcrumbs)
  • 1/4 cup grated Parmesan Cheese
  • 2 Tbsp butter, melted
  • 3/4 cup reduced fat mozzarella cheese
  • 1 cup marinara
  • cooking spray
Directions:
  • Preheat oven to 450.  Spray a large baking sheet lightly with spray.
  • Combine breadcrumbs and Parmesan cheese in a bowl.  Melt the butter in another bowl.  Lightly brush the butter onto the chicken, then dip into breadcrumb mixture.  Place on baking sheet and repeat with the remaining chicken.
  • Lightly spray a little more cooking oil on top and bake in the oven for 20 minutes.  Turn chicken over, bake another 5 minutes.  Remove from oven, spoon sauce over chicken and top with shredded cheese.  Bake 5 more minutes or until cheese is melted.
